Shells;
2 cups all-purpose flour
3/4 teaspoon salt
1 cup Crisco shortening
4 tablespoons ice water
Filling:
1/2 cup lightly packed brown sugar
1/2 cup corn syrup
1/4 cup Golden Flavour Crisco
1 egg. slightly beaten
1 teaspoon vanilla extract
1/4 teaspoon salt
3/4 cup raisons
Prepare Crisco Pastry recipe for double-crust as per directions on package.
Roll out thinly on lightly floured surface. Cut into rounds with 4" cutter.. Fit into medium size muffin cups.
Filling: Combine all filling ingredients except; raisons, mix well.
Put raisons into pastry shells, dividing evenly. Fill 2/3 full with syrup mixture. Bake on bottom rack at 425 degrees for 12-15 minutes or just until set. Don't overbake. Under baking makes them runnier.
Cool on wire rack then remove form muffin pan
Yield: 12 Servings
