12 Yukon gold potatoes
12 slices bacon
2 cups sour cream
2 cups old cheddar cheese, shredded
2/3 cup green onions, chopped
Peel potatoes, cut into quarters. Put in a pot of boiling water, cook until tender. Cook bacon until crisp, drain well & chop and set aside. Drain potatoes once tender and return to pot; dry over medium heat for 30 seconds.. Mash potatoes with sour cream. shredded cheese, green onions and bacon. Scrape into a 9x13 inch baking dish. Bake in 400 degree oven for 15 minutes before serving.
Yield: 12 servings
