8-10 carrots, peeled, chopped
1 small sweet potato
2 tablespoons butter
1 medium onion, chopped
1 clove garlic, minced
4 cups chicken broth
1/4 cup fresh orange juice
2 teaspoons fresh ginger, minced
1 teaspoon coriander
Salt and pepper
Melt butter in a large saucepan, add onion, garlic and minced ginger and cook for 5 minutes. Add in carrots, sweet potato, chicken broth, orange juice and coriander and bring to a boil until tender. Remove from stove and blend mixture in a blender until smooth. Return to saucepan. Serve hot.
